Sunday morning breakfast

 

It was a rainy morning here in South Jersey today. The radar has nothing but good things to say...

That yellow? Yeah thats where I am.

 

Instead of mulling about.. I took the time to get cracking on some breakfast. The husband was complaining that I don't supply him with Sunday breakfast anymore, So I set off to prove him wrong. And get some waffles in my own belly.

Lets get cookin.

 

Ahhh. Hello there eggs & friends..

I think my least favorite thing about baking/cooking is getting the ingredients together all at once, and getting them prepped. This would be the reason I've never really logged meals on my blog. I get the camera out, and start to get cooking.. and then become a whirlwind of a mess and before I know it. things are half made, and I took one picture.

I am trying to better myself at this.

 

I might be weird.. But I like the way eggs look.

Time to mix mix mix...


I use a Belgian waffle - like maker. I've never been able to perfect exactly how much makes a full circle waffle. It's always toooooo much and I have spillage all over the place, or they're funny shaped and not round at all.

This looks like enough.

 
Close the lid, and see what happens....

 

Almost perfect.

 

Now I can't just stop there. Butter? Syrup? They would be the NORMAL way to go about adding pizazz to a delicious treat...

 

But how about powdered sugar glaze??

Grilled Chicken with Salsa Rice & Corn!

I was very motivated today to cook. I've been craving chicken and rice since monday. Luckily today, I finally got my wish.

Let's see how this shook out..


Getting that chicken all flavored up. I noticed I have really high intakes of sodium, so I tried to keep it low key.

 

Next up..Grill that chicken. I started the chicken, and then did all the remaining work.. When I was done fixing the rest of the food, the chicken was ready to go!

 

Yummmm. I LOVE corn. I can eat it every day. Look how yummy and yellow :)

 

cut up the avocado, and mix in the lime juice, then add your salsa. (I puree mine down so it's more saucy)

Mix in the rice to that mixture and get it coated.I used bagged minute rice. no need for picture of that :/

 

As I said , when the ancillary food are done being prepped.. The chicken is cooked!

 

What comes next is common sense. Plate that food up and enjoy! (The corn isn't dirty... I put some Mrs. Dash spicy chipotle seasoning on it)

Living the healthy life...

I wouldn't say I'm on a "diet". I've just recently (with 2 vacations coming up) wanted to start evaluating my food intake, and working out ethic.

I had used a food journal in the past. I thought writing things down would make me look at what I'm eating in a different light. I would track my food intake, and it made me double think eating those Swedish fish from the vending machine, and picking celery and PB instead.

I then stop every time I start, because I realize it was doing nothing to my body. And I look exactly the same. :c

Then I found this site - Calorie Count . It changed EVERYTHING I thought about logging your food.

(don't judge me - this is after lunch today)

When you log on you can log in your foods eaten, how much water you drank, and the activities you've done (burn those calories)

It produces this little chart to show you how much you need, or what you don't need more of. It's the first time I ever got to really see what the food I was eating really did for me. And lets just say the first chart I did.. Was not so great. But I've been doing this for a couple weeks now, and I've bettered my eating habits already.

So keep an eye out. I'm going to be posting a little more about meals, and tracking my work.. :)

 

Farm Fun

Instead of heading south with the rest of NJ and part of the "Philly" drivers who all attack my Friday drive home, I opted to head out to my sisters house to see what we could get into with a 3 year old...

Apparently not too much.

There is a cutesy little place in the area I used to visit when I was a child called Johnson farm. I figured going there would be fun for me to see, and for the niece to have something to see.

  
I was pleased to see how it had grown from a dinky little farm stand, to a baking space, local grown food stop.

It was hot.. But it was fun getting out in the fresh air. And of course I got a couple treats. :)

Apparently Unicorns eat candy cane sticks and rainbows.. Keep that in mind next time your on a hunt.

 

And when you get some time get out and visit your local farmers markets. It's more fun than you think.

 

Been Busy...

Sorry for my lack of posts latley.

Working 2 jobs, and constantly being a yoga genie, and trying to better my fitness.. I've been kinda sparse in the blogging universe. I though about getting rid of my blog. I don't feel as if I have the pizzaz some people posess. But I do love to look back on my little site here and think about all those fun times. It kinda keeps me in good spirits about it.

Joe's grandmom got the WHOLE family a Christmas gift. A cruise to the Bahamas.

I have a SLIGHT fear with the thought of being on the open ocean. With nothing around. For a matter of days. (a week if you think about it)

I'll be spending 7 days and 6 nights floating about the atlantic from one Bahama Island to the next. I am trying to think of things I can bring with me to keep my mind of the fact that I'm hundreds of miles from the land, where safety and roads exist.

I'm trying to keep happy, and not freak myself out. So we're making sure to pack rediculous fun clothes for the duration of our trip. I think it'll be the best part of the trip. :)

 

Anywhoodle. Sorry for the lack of posting. I'll try to keep up, and not let my other life get in the way.

I was an extra!!! (for It's always sunny in Philly)

It all started with a tweet.

Someone had retweeted Danny DeVito's tweet saying they were in town taping for the week. This had prompted the stalker in me to try to find out where they were shooting so I can find them, and get to maybe take some pictures.

In my searches online, I ran across a couple hints as to where they were going to be, but then I found it. A casting call looking for background extras. It was the late in the week, and I really had no idea if they had already made choices, so I didnt really expect much. I sent in 3 pictures, along with my age, the note that I had never been an extra, and my number. 10 minutes later. An email asking if i was available Wednesday.

WIN!!!

I was SUPER giddy as this is 10 times better than getting to stand on the side lines and watch the fun, I was going to be PART of the fun! Plus getting to be on tv is on my list of things I have always wanted to do, so this was all kinds of happy for me.

In the luck of it all I got Joe to send pictures in, and he ALSO got picked to arrive. Double Win.

Wednesday came and we arrived. It was a 10 hour day of takes, double takes, and waiting around for a long time. But don't let those decieve you. It was also mixed in with crossing paths with the cast, and getting to mingle and say hello!

I was feeling to nerdy to ask for pictures. But did get to talk to Rob (Mac) and Kaitlyn (Sweet Dee), Danny DeVito walked by and asked me how my day was, and Joe and I got to have a 5 minute conversation with Artemis who was video taping us for some reason.

I will take this day with me forever. I was proud of myself for being so "non-stalkerish" I had never met an actual celebrity, so I didnt know how I'd react. Apparently, I reacted the same way I would if I talked to a stranger on the street (which I do with ease)

Baltimore Fun

 

It's Todd's (see above) birthday this Wednesday. We celebrated early by heading into the Charm City. A 2 hour drive after work on Saturday, and we were there. The boys enjoyed how they could reminisce about their bachelor parties. Myself and Ang, Not feeling too hot and not remembering our last nights out.

Meeting guys from the 80's? Well yeah we did that too..

That was really the extent of the first night. We hit up a couple bars. And suffered in the muggy heat. Managing to make our way back to the hotel.

 

Sunday was a little better. We were all feeling better. And the sun was giving us a break.

We headed downtown to wander, get food, and do some shopping.

I did a little shopping....

I did some e-shopping this week.. 

 

I have been craving new technology lately. I had my eye on a Nook, but the husband was trying to push me on getting a tablet of sorts. After much debate, we found that with some manual work will turn a Nook into an android app running device. This made me happy. And I purchased one right away....

  

 

I played with it all night Friday. I downloaded a book to read (Karlology) by the hilarious Karl Pilkington of "An idiot Abroad" , played some games, and just fell in love. I went out and bought it a little jacket so it doesn't get dirty too. :)

I'm a tad bit bummed because it's a new 1.2 version, and can not yet be hacked into to create the android app store. So I must be patient. And I hope good things will happen.

 

I also got a new pair of shoes from ideeli. They're by Poetic Licence. I heart them. Pink AND polka dots. How can you not be in love?!

 

While I was on a sopping kick, I went ahead and purchased a dress from Delia's I'd been eyeing up for QUITE some time.. It just happened to be on sale. Which made my day. Again. PINK POLKA DOTS! love love love

 

The best part? I got them ALL ON SAle! :)
